Popayan is the Capital city of the South Western state of Cauca, Colombia Coffee, amongst a diversity of other crops, is grown anywhere from 1100masl to 1700masl on the moderate, Eastern slopes of the Andes mountains.

The amazing Cauca landscape is made up of rainforests, basins, natural parks and volcanoes, the largest being the Purace volcano which has provided the rich volcanic soil in which these coffees are grown. The Magdalena rivers also offer an abundance of water to the region. The Andes mountain range crosses through the Cauca region, providing a protective area for the plateau of Popayan. That, along with the cool climate and high altitudes, creates an outstanding coffee.

Coffee is grown by small coffee producers (usually up to about 5 hectares) driven by pride of product and very hard work, resulting in some of the finest coffees throughout Colombia. These farms are interspersed between ancient archealogical sites as well as between indigenous groups that have been growing coffee here for decades. The unique climatic conditions and soil characteristics result in a tremendous expression of ripe stone fruits, nutty tones and sweet berries.

After hand picking, the coffee is pooled and washed, using either the traditional method or the more common Eco-milled method, which uses less water. Once dried, it is sorted, QC graded and blended to maintain a consistent profile.
